Sustainable spaces in the FnB industry

Under many environmental and health-related challenges within today’s FnB industry, Pizza 4P’s has consistently strived to embed sustainability into every aspect of its operations.

This commitment led to the launch of the project “Sustainable Spaces in the FnB Industry,” which has continued to expand over the years, especially in the field of green design in restaurant spaces.

Launched in 2021, Pizza 4P’s opened its Edutainment restaurant model in Xuan Thuy, Ho Chi Minh City. The restaurant integrated Education and Entertainment, offering children expanded knowledge about sustainability, including pizza-making workshops using sustainable ingredients. In 2022, the project introduced Vietnam’s first Zero Waste restaurant model at Hikari Binh Duong. This location features green space integrated with sustainable systems such as composting and circular hydroponic herb gardens. In 2023, Pizza 4P’s Lotte Tay Ho continued to deliver practical and inspiring initiatives, notably the “Recycle-for-Peace” room, where waste is sorted into categories alongside a community garden. To date, the project has achieved positive results and continues to expand its impact.

After more than a decade of operations, Pizza 4P’s has identified key challenges in the FnB industry. Food waste and ineffective waste management in restaurants have become pressing concerns, leading to large volumes of waste discarded to the environment. Improper waste treatment also caused pollution and negatively impacted public health. Though there have been awareness promotion efforts, most consumers have not actively participated or fully understood the meaning of sustainable development. Therefore, waste reduction solutions and enhanced recycling awareness are essential for the long-term sustainability of the FnB industry.

Additionally, growing environmental and social awareness among young people has strongly influenced the project development. Pizza 4Ps realised that young consumers care not only about food quality but also about brands’ social responsibility and environmental commitments. They seek new dining experiences while tend to opt for companies that implement sustainable practices.

In response, 4Ps has not only carried out sustainable development project in its business practices but also spreads sustainable values and inspires customers to live more sustainably through its restaurant spaces - connection points between the brand and its customers.

Over the past three years, Pizza 4P’s always thrives to expand sustainability initiatives across three flagship restaurants, each adopting tailored models suited to its location and customer base to resolve environmental and public awareness issues.

Circular Model and Edutainment - Pizza 4P’s Xuan Thuy (2021)

The first restaurant in the system to be built on a circular economy and Edutainment model. It includes composting, circular hydroponics, and an herb garden. Located near many schools, it leverages educational connections to raise sustainability awareness among local families and children.

Zero Waste Model – Pizza 4P’s Hikari Binh Duong (2022)

Vietnam’s first Zero Waste restaurant, developed in partnership with Becamex Tokyu in Binh Duong smart city project. The restaurant uses recycled plastic in decoration and established a circular ecosystem that reduced landfill waste by over 73% in 2023. Inspired by the successful model in Cambodia, the design demonstrates sustainability from concept to operation.

Green Space and “Recycle for Peace” Room - Pizza 4P’s Lotte Tay Ho (2023)

Located in a shopping mall, this restaurant integrates green space with a community garden and the “Recycle for Peace” room. Customers can participate in recycling activities and receive rewards, encouraging waste reduction while providing a comfortable urban retreat.

This three model was selected based on factors such as location, local partners and strategic direction of each restaurant, creating varied sustainable approaches in the food industry.

Vision

Pizza 4P’s is committed to environmentally friendly projects to achieve its vision of “Making the World Smile for Peace,” minimising waste and maintaining supply chain ecosystem sustainability.

Goals

Sustainability serves as a guiding principle toward 4P’s vision: “Make the World Smile for Peace.” Beyond delivering dining experiences, 4Ps aims to create positive community impact, support local agriculture, and promote sustainable farming. During its operation, 4Ps also apply environmentally friendly methods to inspire and prove that businesses can contribute to the environment and society. 4Ps pizza is not merely a dish but also represents the embedded responsibility for the Earth.

Waste Reduction

4Ps is committed to main recycling operations at Hikari Binh Duong, processing over 20 tons annually at that branch and over 88 tons across the system. This will soon be replicated to other branches, creating both waste reduction but also systematic environmental sustainability.

Energy Efficiency and Renewable Energy

4Ps expand renewable energy partnerships to other branches to reduce fossil fuel dependency and promote clean, sustainable energy sources.

Positive Engagement

Continue the “Recycle, Receive Gifts” program across three branches (implemented in Lotte Tay Ho and two Cambodian branches) and has deployed plans to expand the model to promote positive engagement between customers and brand.

Community Outreach

Conduct sustainability workshops and talks, recording a participation number of over 4,000 children participating in 2023. 4Ps aims to carry on workshops, talkshows and sharings about environmental protection to raise public awareness.

Implementation Process - Scope - Budget

Phase 1

Established in 2021, Pizza 4Ps Xuan Thuy is a sustainable space, aiming to promote public awareness about the environment through Edutainment model. The restaurant provides activity for children such as pizza-making classes and interactive activities such as raising red worms and making candles from leftover oil, higlighting attention to environmental and health care.

To build a circuclar ecosystem, the restaurant has applied the “Worm Composting - Aquaponics - Herb Garden,” system, including:

  • Vermicomposting: Recycle food waste into compost for vegetable gardens and provide fish food.
  • Aquaponics: Waste from fish now become nutrients for crops; water is filtered and redirected to fish ponds.
  • Solar energy: Provide operation energy for the restaurant.
Phase 2

In 2022, Pizza 4P’s expanded its commitment to sustainability with the launch of Pizza 4P’s Hikari Binh Duong - the first zero-waste restaurant in Vietnam. The facility is constructed from natural and recycled materials such as plastic and non-fired Adobe bricks, while over 3 tons of plastic is repurposed to decorative elements. Moreover, food waste can be used to feed fish, and broken plates are upcycled into unique art pieces.

To ensure a sustainable process, the restaurant collaborates with local partners such as Becamex Hikari, Thien Sinh Farm, Green Connect, and Plastic People for waste treatment. After closing hours, there are teams to sort waste, record data, and transfer it to recycling partners. Spoiled pizza dough is repurposed as pig feed, vegetables are transformed into

Bokashi compost, used cooking oil is converted into biofuel, and crab and clam shells are ground into poultry feed. Additionally, the restaurant features a community garden where guests can learn about organic farming and the importance of soil health.

Phase 3

Within over a year, Pizza 4Ps Lotte Tay Ho was opened with a unique, artistic space from recycling material and leftover plastic, linking between the community and the environment. This restaurant is also surrounded by handmade bamboo pieces and "plastic dragons", enhancing customer experience.

Notably, the outdoor community garden invites guests to engage in interactive activities and gain hands-on knowledge about sustainability. The site features a recycling system to convert food scraps into nutrient-rich fertiliser for vegetables from earthworms, while an Aquaponics system repurposes fish waste as a natural nutrient for the garden.

Additionally, the restaurant also launched 'Recycle to Receive' program to encourage waste reduction among diners. For every 300 grams of recyclable waste, customers receive one stamp. With 10 stamps, they received a free pizza. Every activity at Pizza 4P’s Lotte Tay Ho is designed to raise environmental awareness and inspire community engagement.

Qualitative Results

Pizza 4P's program has brought meaningful impact to the community through environmentally-friendly models on each restaurant:

Pizza 4P's Xuan Thuy: With the Edutainmain model, over 5,500 participants joined for pizza-making and learn about circular models. The restaurant also utilised nearly 10MWh renewable energy each year, positive contributing to sustainable energy.

Pizza 4P's Hikari Binh Duong: The restaurant has recycled over 3 tons of plastic waste for construction materials and reach over 73% in recycling rate in 2023, equivalent to preventing 21 tons of waste from being landfilled, showing strong actions for environmental footprint reduction.

Pizza 4P's Lotte Tay Ho: Has achieved LEED v4 certification for sustainable design and construction. Over a year of operation, the restaurant has recycled more than 2 tons of plastic, promoting an eco-friendly approach amid the vibrant city.

These results have been a testament for Pizza 4Ps efforts in constructing sustainable spaces, enhancing not only environmental quality but also community awareness about a green lifestyle.

Quantitative Results

By applying a circular economy model, the program has reached a 73% recycling rate, showing clear results in resource management and usage. Over 5.500 people has joined and spread their knowledge about this model, with 10 MWh renewable energy being used annually to minimise dependence on fossil fuel. Over a year in operation, its system has recycled 3 tons of plastic waste and 2 tons of other waste maintaining a 73% recycling rate, thus affirming the model sustainability and scalability in practice.

Pizza 4P's is implementing a sustainable model across several countries, including Vietnam, Japan, and Indonesia. Beyond just serving food, the restaurant aims to create experiences centered around sustainable practices for its diners.

In Japan, Pizza 4P's carries the message "Oneness - from Earth to People", emphasizing connection and respect for all living beings. Dishes such as pizza, pasta, and salads are prepared using transparently sourced ingredients, showcasing a commitment to sustainability and gratitude for natural resources.

Scheduled to officially launch in December, Pizza 4P's Indonesia will operate under the theme of "Biodiversity." The restaurant will utilize sustainable materials, such as flooring made from seashells and FSC-certified teak chairs, alongside other eco-friendly products. Every material chosen serves a functional purpose while telling a story of the brand's commitment to preserving regional biodiversity.
